Quick Basanthi

Ingredients

1. Bread ... 200 gm 2. Milk ... 1/2 liter 3. Milk maid ... 200 gm 4. Badam ... 10 gm 5. Cashew nuts ... 10 gm 6. Elachi ... 4 nos 7. Rose essence ... 1 tsp

Procedure:

Soak the white portion of the bread in the milk and mash it well. Mix with the milk maid and stir it well. Filter in through a sieve with big holes. Transfer it into a sauce pan and allow it to boil once Add the elachi and the essence. Switch off the stove. Add Badam and cashew nuts and keep it in the fridge. It is better that the cashew and badam are broken into small bits.

BASANDHI: Milk=1litre sugar=1/2cup cardamom powder=1/4tsp

Heat the milk in a thick vessel. Bring it to boil, then bring the flame to low heat and leave it for some time. The cream of the milk will begin to separate and will float on top. Remove this cream on to a separate vessel. Repeat this process until all the milk is exhausted.Add the cardamom powder and mix. Refrigerate and serve cold.
